latkes for one 04/04/2009

tonight i made latkes, just for the hell of it. one of them ended up splattering in the pan so that it had six points, like a star of david, and i thought of my grandmother and cried.

then i smothered them in sour cream, packed up the pipe and felt better.

peel 2 medium-sized potatoes, chop em real fine in the food processor with a little bit of onion (half of one if you love onion, i only used a tiny bit because i loathe them). squeeze some excess moisture out of those babies, as much as you can. lightly beat one egg, add salt and pepper. mix in potato, add maybe a tablespoon of matzo meal (if you’ve got it- i used flour, worked OK for me). put some oil in a skillet- more than enough to coat the pan. enough so that the latkes take a little bit of a bath. now drop the mixture in tablespoons on the skillet. let em sit for a few minutes until they are crispy and brown on the bottom, then flip them and brown them on the other side. put em on paper towels to soak up the grease. serve with sour cream and applesauce. (i put hot sauce on mine instead)
